Orange-Glazed Tofu and Asparagus: This is a really nice tofu dish, with the tofu marinated, then fried, then glazed in a delicious orange sauce. I took the extra step of roasting the asparagus, because I love roasted asparagus the most. I scaled the recipe down to use 300g of tofu and two bunches of asparagus, which gave me two servings over rice and some baby spinach. I left out the chili paste from the sauce, of course.

Tofu with Lemongrass and Snow Peas: This is quick and easy, with sauteed red onion, tofu, and snow peas. The flavour comes from a mix of ginger, garlic, soy soauce, and of course... lemongrass. It does say you can sub lemon zest for the lemongrass if you have to, but I would say definitely hold out until you can get some lemongrass. The flavour just wouldn't be the same.

Tofu and Edamame Stew: Soy oh soy! As well as the two types of soy, this also has celery, potato, zucchini, peas, baby spinach, and carrot in it. What a very stastifying stew! I did find it fell a little bit flat in flavour initially, but nothing a bit of soy sauce (soy oh soy oh soy) couldn't perk up.

Tempeh and Vegetable Stir-Fry: I love a simple and quick stir-fry recipe. Thisone is simple, with tempeh, broccoli, and mushrooms. It also calls for capsicum, but I used zucchini and carrot instead. Served over rice. Sometimes simple is just what you need for a great dinner.
