My brother went all out making several varieties of pinchos (an appetiser served on top of bread), including two vegan ones! There was hummus with roasted asaparagus, and avocado with mushroom. Served on fresh crusty baguette slices, these were very good!
His partner made a glorious chickpea and spinach dish. It sounds simple, but the flavours were so rich and deep.
My brother also made a special little dish of fried potatoes and sauteed broccoli.
Here is the vegan selection for the day! So delicious and filling.
For dessert we went the easy route, ordering a party platter of churros to be delivered from San Churros. Their churros are vegan, and they have several vegan sauce options. Pictured here are peanut butter, dark chocolate, and cookie butter vegan dips.
This was such a great lunch, with a lot of fun and laughter. It was so lovely to have them here. They left to go back to Spain a few days after this. I miss them!

DeleteChurro delivery??? I've never heard of such a thing! Even in Southern California, we didn't have anything like that. Lucky you! It's especially awesome they are vegan & have so many vegan dipping options.

The perks of living in the Uber Eats delivery radius! A lot of places here who make churros make them vegan friendly.
