Father's Day 2022, Spanish Style

This year Father's Day fell when my brother and his partner were visiting. She is Spanish, and they live in Spain, so I sat back and let them take over the Father's Day food preparations. They didn't make everything vegan, but a lot of it was. I will be featuring the vegan food here!

My brother went all out making several varieties of pinchos (an appetiser served on top of bread), including two vegan ones! There was hummus with roasted asaparagus, and avocado with mushroom. Served on fresh crusty baguette slices, these were very good!

His partner made a glorious chickpea and spinach dish. It sounds simple, but the flavours were so rich and deep.

My brother also made a special little dish of fried potatoes and sauteed broccoli.

Here is the vegan selection for the day! So delicious and filling.

For dessert we went the easy route, ordering a party platter of churros to be delivered from San Churros. Their churros are vegan, and they have several vegan sauce options. Pictured here are peanut butter, dark chocolate, and cookie butter vegan dips.

This was such a great lunch, with a lot of fun and laughter. It was so lovely to have them here. They left to go back to Spain a few days after this. I miss them!

There are actually four tiny kittens in this photo, two of them are just snuggled under the blankets between the two you can see.

    1. I don't think she used a recipe as such, but I shall ask her!

  2. Churro delivery??? I've never heard of such a thing! Even in Southern California, we didn't have anything like that. Lucky you! It's especially awesome they are vegan & have so many vegan dipping options.

That's nice that your brother & his partner made Father's Day dinner for everyone. It all looks delicious - especially that chickpea dish!

    1. The perks of living in the Uber Eats delivery radius! A lot of places here who make churros make them vegan friendly.
