Indonesian Tempeh in Coconut Gravy: I made this many years ago, before my coconut fat intolerance took off, so I didn't have to do much in the way of substitions in that regard. Though I of course swapped out the capsicums for carrot and zucchini! Served over rice with broccoli.

Tempeh with Potatoes and Cabbage: This is a great hearty meal for cold nights. Who doesn't live potatoes, carrots, and lots and lots of paprika? Just served along side some broccoli for some greens.

Southern Succotash Stew: This uses a package of frozen succotash, which is just not a thing here. So after a quick google I subbed in frozen corn and edamame. This was before edamame became a problem for my tummy... what is it with getting older and weird food things? It also has carrots and potatoes. The protein here is tempeh, but I took the option of adding in a can of kidney beans as well. The recipe also suggests sausages as an add in, and it would have been so good with those!

Baked Jambalaya Casserole: Baked rice casseroles have always been a pain for me, and this was no different with the rice still being hard after the cooking time. I increased the heat and baked for a bit extra and it worked out. But these days I soak my rice before I make anything like this, and that has been a game changer. This has tempeh, tomatoes, kidney beans, and cajun seasoning in it, and I subbed out the green capsicum for peas.

Seitan Piccata: I love piccata! This has thin seitan slices, and is topped with a lovely piccata sauce. What is it about lemon juice, white wine, butter, and capers? Magical.

Seitan with Green Apple Relish: This is pretty simple. Seitan seared and simmered in some apple juice, and then topped with a fresh granny smith apple relish. It is sweet and tart, and great served with rice and broccoli

The piccata does sound magical, but I'm most intrigued by the tempeh!

DeleteOoh, the piccata sounds delightful. I have that book, but it intimidates me with all those recipes! Also, I'm from the South and I've never even seen frozen succotash! Ha! I don't think succotash is really even a Southern thing (maybe it's just some part of the South that's not the Mid-South though, where I am).
