Recipe Round-Up: More Quick-Fix Vegan

I love Robin Robertson's series of 'Quick-Fix' books, and More Quick-Fix Vegan is great. You can see my previous round-ups of this book here.

Stovetop Seitan: This is the same recipe that appears in Quick-Fix Vegan. It is a very fast, easy recipe. There are three options for cooking the seitan, but I like this stove top one, it comes out nice and firm.

Garden Vegetable Bean Soup: This is a super simple soup to make, and is full of all sorts of great veggies. I used a blend of kale and spinach for the greens, rather than just straight kale, and also used a drained tin of diced tomatoes instead of chopping a fresh one. As well as veggies and white beans, this also has a grain added. I chose cooked brown rice.

Sushi Bowls: These were fun bowls. I used 1 cup of uncooked sushi rice, which I cooked in my rice cooker. There are lots of crunchy veggies on top, and I subbed in radish instead of using capsicum. I also added a block of Japanese flavoured tofu. Served over salad greens, I got three serves from this, rather than 4.

Banh-Mi Bowls: Robin loves Bahn-Mi, and loves making all sorts of bahn-mi inspired dishes. This yummy bowl has salad, veggies and tofu with a hoisin-based sauce, as well as toasted bread cubes. I got three servings out of this rather than 4.

Quinoa and Black Bean Chili Bowls: I made a half batch of this and got two decent servings (the full recipe serves four). I didn't have fire-roasted tomatoes, so just added a bit of liquid smoke to regular tinned tomatoes. This is a very substantial dinner.

Mac Uncheesy Bowls: I love mac and cheese. The white bean based sauce in this is thickened by adding either chopped roasted capsicum or cooked butternut, I think we all know that I used the butternut. The sauce is quite thick, which is very satisfying.

Mediterranean Tofu Scram-Bowls: Scramble... scram-bowl... get it? I used extra firm tofu instead of firm here, and subbed in carrot instead of capiscum in the vegetable mix. You have the option of using basil or parsley for garnish, I used basil. I served this with some baked potato slices.

Sesame-Orange Tempeh with Snow Peas: My dad is always a bit sad when I serve tempeh, it isn't his favourite. But he really liked it here thanks to the great sauce. I used a 300g block of tempeh rather than 250g, so I used the larger Australian tablespoon rather than the US tablespoon when measuring out the sauce. Served over brown rice and baby spinach.

Vegetable Fried Rice and Quinoa: Great for when you have leftover grains kicking about, and the full quantity will make quite a lot! I also probably had closer to 2 cups of tofu, rather than just one. I subbed in corn instead of capsicum.

Black Beans and Spinach with Tomato-Avocado Salsa: The beans and spinach here are a little on the bland side, I ended up adding a bit of cumin, but they are picked up beautifully by the fresh avocado and tomato salsa that tops them. Served with brown rice.

  3. These recipes seem so different from whatI normally see on here. Maybe lighter? Or maybe more Asian inspired? They all look so great though.

    1. I guess because I post recipes book by book, rather than by what I have had to eat in a week? Some of the books are very decadent and heavy, to be sure! This book is a good mix, lots of whole foods. :)

  4. Mmmmm. I must try that banh mi bowl. I have that book. Also, the scramble bowl with the potato slices looks amazing! And I had no idea the Australian tbsp as different from US tbsp!

  6. Sahara's paw is so cuuuute!!! So much of these meals look right up my street, obviously I want to make mac and cheese now but I also think the scramble bowl, the banh mi bowl and the sesame orange tempeh sound super delicious.

    Your dad doesn't like tempeh? Wow. I can't imagine not liking it ;p The sesame-orange tempeh looks really good. I love snow peas. Is that black sesame seeds on top? The Australian tbsp is bigger than the US one?

    1. I know, I love tempeh! A friend of mine used to hate tempeh. If she accidentally ate some she would have this hilarious 'tempeh face'. But she taught herself to love it!
      And yes, I have a big bag of black sesame seeds I am using up, so I often use them for garnish instead of regular.
