Vegan Mofo 2014 #5: Robin Robertson Rocks - One-Dish Vegan


I hope everyone is having a lovely MoFo. I've been working long days at work the last two days (thank goodness for having prepared a bunch of blog posts in advance!), so haven't had a chance to be commenting and reading as much as I would have liked, but I am having a great time seeing what everyone is up to in between consults and procedures.

One Dish Vegan has quickly become one of my favourite cookbooks, it is full of delicious, mostly wholefood, easy recipes. I have been cooking out of this recipe a lot recently.

Minestrone with Cannellini Beans and Rice is a satisfying soup that was excellent on a day I was feeling a bit under the weather. I added a big scoop of nooch to my bowl (I can't help myself with nooch) and avocado on bread.

Tuscan Pasta and Bean Soup was another good sick-day soup (what is it about feeling a bit icky and wanting loaded up tomato soup?). Packed full of lots of vegetables, beans and pasta.

Hoppin' John with Kale was a fun dish, that I managed to eat on the traditional New Year's Day. We don't get black-eyed peas here in tins, so I only have them when I get around to cooking from scratch, which isn't as often as I should. I needed a bit of extra time and liquid to get the rice to cook through, maybe there is something different between Australian and US rice because I often find this in recipes? I served it with some homemade sour cream and tabasco sauce.

Japanese Vegetable Curry is always a favourite of mine, and my mum said this was very close to the original (she knows about these things). I am yet to find S&B brand curry powder in Brisbane (though they do have other products available here), so I used House brand curry powder in this recipe. I served it over a big mound of Japanese-style rice.

Louisiana Red Beans and Rice was another dish where I had to cook for longer with more liquid to get to cook through, but it was a good result in the end. Quite a few recipes in the book called for tinned fire-roasted diced tomatoes, which are a bit pricey so I space out recipes requiring them, but they do add an amazing flavour.

French Lentil with Sweet Potatoes and Chard is a marvellous, earthy dish that hit the spot perfectly after a weekend of slight indulgence. I served it over brown rice to bulk it up a little. Chard (or silverbeet, as we call it here) is a green that I really like but don't use often enough.

Almond Bulgur with Black Beans, Tomatoes, and Kale is a fun dish that is full of vegetables. There ended up being a lot more veggies than I expected, which is only a good thing! An excellent vegetable to grain ratio. My almond butter was rock hard, but thankfully the heat from the dish melted it down nicely.

Almond Bulgur with Black Beans, Tomatoes, and Kale


Indian-Spiced Risotto is not a traditional risotto, using basmati rice and simply simmering as opposed to having to stir continuously. It combines chickpeas, peas,cauliflower in a spiced coconut sauce. It actually formed a really nice 'crust' of rice on the bottom of the pot, which was crunchy and delicious.

Nigerian Black-Eyed Peas and Greens not only uses the previous black-eyed peas, but also the treasured fire-roasted tomatoes. I used kale for my greens (I love kale). This made big servings, and was very satisfying.

Cuban Black Beans and Rice made fairly small servings, despite the hefty dose of beans in it. It is served over rice, and I also served over some baby spinach leaves (as you may notice I do with a lot of dishes, I always try and get some more greens into my life).

Our beautiful clinic girl Abbey has some pretty cute toes. We call them her chipolatas, as they do resemble plump little sausages.

I won't be blogging over the weekend, as I will be working long days at OzComicCon. I am very excited to be meeting Colin Ferguson (Eureka), Jason Dohring (Veronica Mars) and Emma Caufield and Nicholas Brendon (both from Buffy), and there are heaps of other awesome guests who will be there as well! Hope everyone has an awesome weekend. If you have awesome con stories, please tell me! Who have you met?

  1. I love one pot cooking. You can't beat it especially on a weeknight! Have a fab weekend, it sounds like a lot of fun. One of the famous people I've met is Mike Joyce (from the Smiths). He took my ex-partner and I out for vegan curry as a thank you for him doing his myspace! It was a fun night.

  2. Sausage toes! I love them! I cannot stand the sight of bare human feet, particularly human toes. Gross! But I love furry kitty toes!

    The black beans and rice look so good to me. I like to bulk up my food with a bit of baby spinach too. It's my favorite green because it's so mild compared to all the big leaf greens that can be pretty bitter.

    Have fun at ComicCon! You're going to meet "sheriff Carter"! I love Eureka! Sheriff Carter always ended up saving the day even though he was the one with the non-genius brain :)

  5. great post. These dinners look really tasty, filling and healthy. This is pretty much the kind of meal I want 9 times out of 10. I don't have this book, but your post makes me think about it! Those little kitty sausage toes are super CUTE. I hope you're having a great time at ComicCon.
