Vegan MoFo 2014 #15: Robin Robertson Rocks - Fresh From the Vegan Slow Cooker


Continuing on with the slow cooker theme, Robin released a follow up volume called Fresh From the Vegan Slow Cooker (though the Vegetarian Slow Cooker book is also vegan). I haven't made much from this book yet, my slow cookers are pretty sadly neglected. I really need to use them more, especially having two!!

Portobello and White Bean Goulash makes four good servings of tasty, tasty goodness. I love anything with sauerkraut. The creaminess comes from store-bought or homemade sour cream. I used the sour cream recipe in the book (picture below), which is based on cashews and really nice. I served this over spinach fettuccine and green beans.

Crockery Cassoulet was a bit stodgy but rather satisfying. As well as beans and vegetables, there is also sliced sausages! Hurrah! I used Sanitarium BBQ Sausages rather than making the ones in the book because I didn't have time. I served this with some french bread as suggested, and some steamed broccoli because greens!

Artichoke Risotto was quite gluggy, as expected for a slow cooker risotto, but unfortunately was also a bit bland. The topping of toasted walnuts and chives is a nice touch. I served this with some of the new Fry's Sundried Tomato and Cheese Sausages - melty cheesy chunks in sausages, yes please! I used leftovers of this risotto to make some Vegusto melty cheese-stuffed fried risotto cakes, which were fabulously tasty.

Chipotle-Polenta Bake has that comforting sense that comes with creamy, tasty polenta. The polenta is studded with pinto beans, corn and chipotles. I served topped with salsa, sour cream (as above) and lots of fresh coriander. I had leftovers, so I spread them into a tupperware container and chilled them, then the next night I turned it out, sliced into squares and fried them. Yum!

Ethiopian-Style Tempeh and Lentils is packed full of protein, and I served it over rice and salad greens. There is a long list of spices in the ingredients, but I took the option of using a berbere spice blend that a friend had given to me.

Sleepy face


This funny little boy was feeling a little bit spaced out after getting his happy drugs before he was desexed. Look at those dainty little paws and that little smooshed face! This cutie pie is also an old adoption kitty who is now enjoying his forever home. Adopt, don't shop!

  1. Everything looks so delicious! I haven't seen those new Fry's sausages yet, but I'll keep an eye out for them. I love the originals and the new ones sound great :)
