Korean Noodle Stir-Fry: This uses those lovely korean sweet potato noodles that I really like. It also has seitan, onion, carrot, shiitake, bok choy, and bean sprouts in a lovely dark sauce (that I left the chili out of).

Noodles with Spicy Peanut Sauce: Or not spicy peanut sauce, if you are me. I used linguine for the noodles and halved the amount from one pound to 250g. I also added extra vegetables, omitting the red capiscum but adding in broccoli, spinach, and carrots. You could also easily add some tofu to this.

Jerk-Spiced Red Bean Chili: This is a great chili! Or stew that should be chili but has no heat in it, if you really want to be nit picky. It has both seitan and kidney beans in it, so full of protein. The sauce is a combination of tinned tomatoes, BBQ sauce, and a great blend of spices. Serve it over some quino and with a side salad, and enjoy! Leave out all the spicy bits.

Black Beans and Wild Rice: This is a very simply yet tasty recipe, with only a few ingredients that work really well. The wild rice gives a nice chewiness to the beans. I served this as suggested, over some white basmati rice, and also topped with some avocado. The leftovers also go great in a burrito.
