Recipe Round-Up: The Garden of Vegan

The Garden of Vegan was one of my earlier vegan cookbooks, and I have made quite a lot out of it. Sadly a lot of that was before I started taking photos, so I don't have a lot of visuals for you, but here are some! You can see other things I have made from it here.

Spinach Salad with Grilled Tofu and Apples: Spinach and apples and tofu are such a good combination, especially when you add some fennel. Here the tofu is sauteed in sesame oil until brown, and the salad is dressed with a mustard mixture.

Zucchini with Tomatoes and Marjoram:This is a simple side dish, with zucchini and roma tomatoes and garlic and hebs. It comes together very quickly. You can tell how many millions of years ago I took this photo, because that is some old school nooch right there. I can't remember what it is called, but it came in a green box when Lotus was out of stock for a while.

Miso Sesame Dipping Sauce: This is simple and great for dipping tofu into or throwing through some stir-fry and noodles. As well as miso and sesame seeds, it also has vinegar, maple, chili sauce and Braggs.

Tempeh Toss: I like this because it has lots of veggies, though I of course left out the capsicum and increased the amount of other vegetables. Very nice served on rice.

Chickpea Toss: They like to toss! This is so simple, with chickpeas and olives and curry powder. Add some rice and greens.

Oyster Mushroom Saute: I love oyster mushrooms. Here they are sauteed with spinach and bok choy and cabbage and served in an orange juice based sauce.

Nutty Pasta Toss: More toss! Heh. The sauce involves blending nuts, parsley and garlic with liquid. It says you can use your choice of nuts, of course I chose peanuts. I would definitely recommend increasing the amount of vegetables to pasta ratio here, though the recipe only calls for 'dry pasta, enough for 2 people', so you can determine how much you'd like.

Hayley and Ian's Peanut Butter Pasta: Of course I love peanut butter based sauces, because peanut butter is life. The caption to this book says that when Hayley first gave them this recipe they thought it would be disgusting... clearly they did not understand peanut butter magic at that point in their lives. It goes well with a tomato salad as a side.

Prince


A flash back to handsome semi-clinic boy Prince, who is sadly no longer with us. He loved being carried around in his papoose!

  1. It's good to see some of the things you've made! I must admit, this book is one of my most overlooked. I too got it early on, but as I started to develop a bigger collection they have fallen out of circulation a bit. I think it's because of the lack of pictures - when I am trying to decide something to make I always end up going for recipes I can see the outcome of. I should get it out and have a flick through..

    1. I don't mind no pictures so much (though pictures are fun!), but this book definitely isn't as flashy as some of the newer books. It is easy for older books to fall out of use. Even some older books that I love, like VWAV, I don't use that often anymore because I have so many new ones.

  3. I've never seen such weird-looking nooch. The Garden Vegan is the last book I got from Sarah Kramer (I have all of them except Vegan A Go-Go). I haven't cooked from it much, but I made the quiche this week and it was quite perfect.

    I think out of the three books by Sarah Kramer, I use this one the least. Though that peanut pasta! *drools* I wish I could make that tonight... but I have some stuff thawed for dinner tonight.

  6. I would never think of using peanut butter with pasta so I might have to try that! There's such a nice selection of dishes here that I might have to revisit this book too. I dug out her other book La Dolce Vegan recently and have made some nice things from it.

  7. What a cute sleeping kitty. I have thought about getting a carrier like that for my pup. I'm not sure she would like it as much as Prince did ;)

    This cookbook sounds good. Lots of good tosses and recipes with peanuts with them. I like how the recipes sound like they come together quickly.
