VeganMoFo 2015 #22: Asparagus in the spring.



22. Make a dish using all seasonal produce.

Don't be confused my Northern Hemisphere buddies, is is SPRING down south! And when I think spring, I think ASPARAGUS!

Lemony Green Veggie Pasta from But I Could Never Go Vegan seemed like just the perfect dish to celebrate spring, and included my beloved asparagus. As well as asparagus, it includes snap peas, leek, baby spinach and pea shoots. Sadly I had to sub snow peas for snap peas, as I made this dish at the start of September (I have a super busy end of September, so I did lots of the cooking for MoFo in the early half of the month) and snap peas were not quite available then. Of course they are everywhere now. Oh well. This dish gave me three serves, and has a bright lemony and Dijon sauce that coats the greens and the pasta (I used penne).

My favourite way to eat asparagus is spritzed with a little bit of olive oil, salt and pepper and roasted. So easy and delicious!

    I should try to check the number of servings of the recipes I cook in under to try not to overeat.

    1. Sometimes I think serving sizes are a bit on the light side, so I often eat more than what is technically a serving. But I am hungry!

  5. Simple roasted asparagus is my favourite way to eat it too. It's so great when it's in season!

    1. Sometimes a recipe will call for it to be cooked another way, but I will roast it and then add it because that is the best!

    I love asparagus! My favorite spring/summer fruit will always be the mighty little strawberry. They are so good when they are in season, but so nasty when they are not!

    1. But I am Aspartagus! Hee hee.
      I love strawberries, but strangely here they are better in the cooler months and early spring. Once summer hits they just tend to be smooshy and moldy and gross. Sadness.

  8. Oooh that's my favourite way to eat asparagus too! I haven't had it much this summer, I think I missed the boat :/ Ah well.

  9. Yeah, that's definitely my favorite simple way to enjoy asparagus too. But I also like it in soups and in tofu quiches... When spring time comes here, we eat a metric ton of asparagus. I love it so much.
